We start with a selection of Cantabrian anchovies ( Engraulis encrasicolus) in order to bring you the highest quality final product. We leave the anchovies for a long ripening period in temperature-controlled facilities on the coast of Cantabria. They are cleaned and deboned completely by hand, resulting in a product pleasing to the most demanding palates. Upon completion of the deboning process, we separate the anchovies according to their size: 00, 0, EC or AC.

For Atlantic Anchovies, Casa Santoña selects catch from the best fishing areas in Atlantic waters outside Spain. The preparation process is the same as the Cantabrian anchovy, yielding another high-quality gourmet product from a different basic ingredient. They are deboned completely by hand and contain a very low level of salt.
